TOPIC: lait frais

lait frais 12 Sep 2017 19:20 #94994

I'm assuming that the freezer is properly freezing the milk at a decently low temp to stop any bacterial activity. So at least -12C for a couple of weeks storage.

Sorry if I'm being thick, but what is "properly frozen" - is there a special trick, or do you mean just chuck it in the freezer until it is fully frozen?

I noticed just this morning that they were selling fresh milk in the Boulangère here in Besancon.

And baguettes from vending machines too. We found several in villages that had lost their bakers in the Loire valley. Pity there aren't more in other areas as so many villages now have no baker.

We had one in Tournus too but it seems to have disappeared now the site it was on is being redeveloped. However the farmer still sells it from a churn in the market. We've also found dairy farmers who will fill a plastic bottle for you if you're there at the right time. There is even one in the rather unlikely place of Pont de Loup in Belgium, just a few minutes from VanKerkoven's chantier naval.

And if you are especially lucky in France you can find a lait cru vending machine. There's one on the sidewalk in downtown Chalon-sur-Soane.

We've never had too much problem finding fresh milk in the Netherlands, Belgium last year and in Nord France this year.

Most big and quite a few of the small supermarkets in Nord France have fresh milk. Colruyt in Belgium about 50% of the time. Check use-by-dates to get the maximum if you don't have a freezer (as we do not) - dig around the back if there are a few bottles. We find that most of the time, if there is only one type it is demi-creme (2%) which suits us.

You'll get used to finding the rather varied locations in which they store fresh milk. It's an adventure!

Alan ,
We normally find it, but not at every supermarket, including the large chains for the reasons mentioned.

The larger FR chains and Delhaize in Wallonie are normally OK, so we snap it up when we find it. Hence having a decent size chest freezer in the bilges is useful.

And properly frozen, thawed lait frais tastes exactly the same as fresh.

We never had a problem, it is not with the other milks, usually with the fresh fruit juice.

"Increasingly the smaller FR supermarkets either don't stock lait frais or have run out when one visits."
Indeed, our experience too, even today at a large one.
Any tips on finding non-uht milk inFrance & Wallonia?
